QUICK Cherry-Chocolate No-Bake Cheesecakes

   A delectable dessert surprise-individual cheesecakes served in cups.  In the bottom of each cup there's another surprise-a cookie!

      3  oz Milk chocolate
1 1/4  cup small-curd cottage cheese
      1  3 oz package cream cheese, softened
1 1/2  tsp grated orange peel
      8  to 10 Chocolate sandwich cookies
      1  cup drained cherry pie filling
Fresh mint sprigs, optional

   In small heavy saucepan over very low heat, melt chocolate, stirring constantly until smooth. Remove from heat;  cool slightly.

   In food processor or blender, combine cottage cheese, cream cheese, orange peel and cooled chocolate;  process until smooth.  Place one sandwich cookie in the bottom of each of 8 custard cups, or muffin pan cups lined in cupcake liners.  Spoon cheese mixture evenly into prepared cups; top each with some of drained cherries; dividing evenly.

   Refrigerate about 15 minutes until slightly set.  Decorate with mint sprigs and sandwich cookie quarters to serve, if desired.
