QUICK Oriental Pork Fried Rice

This recipe uses cooked rice and cooked pork. That makes prep time much shorter.
Ingredients
1 1/2 T vegetable oil, divided
2 eggs, well beaten
1 cup cooked, boneless pork, chopped
1 cup fresh mushrooms, chopped
1/2 cup sliced green onions, whites and tops
3 cups cooked rice, cooled
2 T soy sauce
Directions
Heat 1/2 T oil in large skillet or wok over medium heat. Add eggs, cook, but do not stir, until set. Remove eggs, in one piece, to a platter. Set aside
Heat remaining oil in skillet over medium heat. add pork, mushrooms and green onions.
Stir-fry for 3 minutes until just tender; add cooked rice and eggs that you have cut into strips.
Sprinkle with soy sauce and toss lightly.
