German Potato Dumplings

German potato dumplings are little balls of cooked potatoes stuffed with a mixture of bread cubes, minced onion and eggs. They are then boiled in water and served with meat and gravy. They are delicious. We used to eat them at the German restaurants in Milwaukee!
Ingredients
8 medium potatoes
1/2 cup flour
2 eggs, slightly beaten
1 1/2 tsp. salt
1 T minced onion
2 T butter
1 slice bread, cut into cubes
Directions
Steam unpeeled potatoes until tender. Peel and force through a ricer onto a platter. Let stand overnight, uncovered.
Add eggs, salt and flour and mix well. Brown onions in butter; add bread cubes, and brown.
Flatten a spoonful of potato mixture in your hand and put a few bread cubes of bread on dumpling. Roll into a ball. Repeat until all mixture is used.
Drop into a kettle of boiling water, uncovered, for 20 minutes.
Drain and serve at once
