QUICK Chicken Pot Pie

Servings: 6 Servings Prep. Time: 15 Min Prep 30 Min Bake Print

   This is great for those cool evenings!  There is nothing like good comfort foods.  



Ingredients

   1/2   cup butter or margarine, melted

      3   T. all purpose flour

      1   cup milk

      3   cups chicken broth

      3   cups cooked chicken, diced

   1/2   tsp. salt

   1/4   tsp. pepper

      1  (16 oz.) can mixed vegetables, drained

      1  (16 oz.)  can green peas, drained

Pastry for a 9-inch pie  

 



Directions

   Combine butter and flour in a saucepan and place over low heat.  Gradually add chicken broth and milk; stir constantly until smooth and thickened. 

   Stir in chicken, salt, pepper, vegetables and peas.  Mix well.

   Pour into a 9 x 13 baking dish.  Roll out pastry to 1/8-inch thick and cut into strips  and arrange into lattice pattern. ( or whatever design you like )

   Bake at 350  F. for 30 minutes, or until pastry browns.
