QUICK Turkey Chop Suey

This is a complete meal in one! You have meat, vegetables and rice. A mandarin orange salad with good greens would go great with this.
NOTE* Also good with chicken or even left-over pork roast.
Ingredients
1/2 cup onion, sliced
2 T butter
2 cups cooked turkey, diced
2 cups chicken broth
1 cup celery, sliced
1 small can sliced water chestnuts, drained
1/2 cup water
3 T soy sauce
1/4 cup cornstarch
Salt to Taste
1 1-pound can bean sprouts, drained
Cooked Rice
Toasted slivered almonds, optional
Directions
In a large saucepan, cook onion in butter until tender, but not brown. Add turkey, broth celery and water chestnuts; heat to boiling.
Combine water, soy sauce, cornstarch and salt; stir into turkey mixture. Cook and stir until thick and bubbly. Add bean sprouts and heat through.
Serve over hot rice sprinkled with toasted almonds. (optional) Pass additional soy sauce.
Use minute rice or packaged rice dish.
