QUICK Beef Meals in Minutes

Ship Wreck Casserole    This one is easy!  Put it all in together and look how good it comes out!     NOTE* Bake a loaf of crusty bread to go along with this and a green salad and you have the whole meal.
QUICK Layered Italian Casserole    This is a great one dish meal.  It takes a while to bake but the prep is quick.  Add a loaf of Italian bread, maybe a small caesar salad. NOTE*  When a recipe calls for ground beef and onion, cooked together, make up a double amount and freeze half.  The next dish you make will go together quicker.
QUICK Creamy Green Enchiladas    This one is good enough for company!  Just add a chopped lettuce and tomato salad.
QUICK Steak au Poivre    This is the ultimate steak recipe!  It is my favorite dinner at the Packing House in Milwaukee, Wisconsin.  This is such a rich sauce, I would add steamed green beans or asparagus alongside. NOTE*  To crush peppercorns, place in a plastic bag and flatten with a rolling pin or side of a heavy knife.
QUICK Sirloin Steak With Cognac Mustard sauce    This is quick and easy, and the cognac adds special touch.  It makes the perfect romantic dinner for two.  This is also a low carb entre. NOTE* Asparagus, steamed and drizzled with butter and lemon juice would go great with this steak.  Make sure you have crusty bread to sop up that sauce!  A Merlot wine would finish it off nicely.
QUICK Filet Mignon For Two, With Zesty Wine Sauce     When you want ot cook something special for the love of your life, what do you cook?   I reach for the old standby favorite, filet of beef.  John loves them!  And, they are low in fat, high in flavor, with this wine sauce.  The fat is in the sauce. NOTE* Mushrooms, sauted lightly with fresh green beans would compliment this entree.  Don't forget the crusty bread to pick up the sauce.!
QUICK Flank Steak and Spinach Pinwheels, Corn-And-Broccoli    Savory steak dish- even the kids will love this healthy alternative.  The corn and broccoli casserole can be made, baked and set aside while the steak is broiled. NOTE* Cornbread or corn muffins would go well with this combination.
QUICK Ginger Beef with Bok-Choy    Some Asian quick rice would go great with this stir-fry of beef and Bok- Choy.
QUICK Low Fat Peppercorn Flank Steak With Green Beans    Low fat but tasty!  The green beans and potatoes compliment the flavor of the steak and round this into a complete dinner.  Just add rolls and red wine and dinner is done! NOTE*  A quick, warm bread can be made adding a can of cresent rolls, separate into 2 sections, sealing perforations.  Brush lighty with olive oil, sprinkle with garlic pepper, parmesan cheese and herbs.  Roll up and slice.  Fit into muffin pans; sprinkle with more cheese or marinara sauce.  In only 12 minutes you will have nice rolls!
QUICK Peppercorn Steaks With Skillet Asparagus    This steak has a very rich and creamy sauce.  A simple green salad and this asparagus are good side dishes to compliment the steaks. NOTE* Have some crusty bread to sop-up that great sauce and, some good red wine! This is my favorite way to cook asparagus.  It cooks quick.  DO NOT OVERCOOK.
