Italian Cheese And Beef Stuffing for Poultry    This recipe makes a heavy poultry stuffing.  It would be great in the cool weather!

Roast Quails, Yugoslav Style    Quails are small game birds that are found over most of America.  There are several varieties.  The best known is often called a bobwhite.  They are available in some markets, frozen.  The meat is white and has a delicate flavor.  Quail is cooked like all game birds.  When young they can be roasted and fried.  When old they should be stewed with a marinade.  ( I do not know how to tell young from old!)
Canadian Snipe, Marinated    Snipe hunting was a fun sport in the old south!  When the northern cousins came down for the summer visit, a young man would be taken out into the woods with a burlap bag to catch snipe. Instructions were given to hold the bag down by the ground and whisper quietly, "here snipe, here snipe,"  at the same time the southern cousin would say, he would "herd" the snipe toward the bag. Many a young man was left in the woods for a considerable time, before they realized they had been duped. But I guess the joke is on the southern cousins, there really is Snipe!  Its a small bird in Canada.
Columbian Beef Tongue   This tongue is prepared as a main dish recipe not a sandwich.  The mushroom gravy with red wine will make this dish stand out. NOTE* The skin and bones will be discarded after cooking.
Greek Moussaka    This recipe makes an 11 x 16 pan of Moussaka.  And, you don't have to be greek to really enjoy this hearty dinner dish.    This milk and cheese make a sauce for the top of this popular recipe.
Mexican Tamale Pie   This unusual hamburger casserole is tasty and not so spicy the kids won't like it.  Chop some lettuce and tomato to serve as a side salad.  Add some salsa and BOY will this be good. NOTE* This takes a little time but the flavor is well worth it!
German Style Rabbit    This rabbit dish is flavored with pork sausage, wine and beer.  The breadcrumbs thicken the gravy, so this dish has a lot of different flavors.    When we were in Germany, it was spring and the flowers were everywhere!  The people were so courteous, when we walked up to a curb, to cross the street, traffic stopped from both ways!  Baden Baden was especially beautiful.    We loved the food of Germany when we were there and, at the German restaurants in Milwaukee!
