Sponge Cake Recipes
Basic Sponge Cake
A sponge cake is light and fluffy made with beaten egg whites. With no fat other than what is in the egg yolks, it is very delicate. This is the same type batter used for lady fingers.
NOTE* It is best to have eggs at room temperature to beat stiff.
Chocolate-Frosted Sponge Cake
This is the basic sponge cake baked as a bar recipe, to be cut in squares instead of slices.
Triple Berry Trifle
You can make the basic sponge cake recipe, bake it in a jelly roll pan, then cut into cubes and build your trifle.
NOTE* This is a combination of two recipes and is a bit involved. To make it quick and easier, buy a plain sponge cake from the bakery, and start from there. Yogurt cheese can be replaced with instant pudding, that's even easier!
