QUICK Orange Cupcakes

   Another flavorful cupcake that everyone will love!



Ingredients

     1  stick butter, softened
     1  cup sugar
     2  eggs, large, separated, whites beaten until stiff
     1  tsp vanilla extract
1 3/4  cup cake flour
   1/2  tsp salt
2 1/2  tsp baking powder
   1/2  cup  orange juice
Orange Icing:
1 1/2  cup powdered sugar

   1/8  tsp salt

      1  T grated orange rind
3 T Soft butter
2-3 T Orange juice



Directions

   Combine butter, sugar, egg yolks, and vanilla in a mixing bowl.  Cream these ingredients together thoroughly.

    Mix flour, salt, and baking powder together in a separate mixing bowl.  

   Add dry ingredients to creamed mixture 1/3 at a time, alternating with orange juice.  Fold in beaten egg whites.

   Fill cupcake liners 1/2 full.

   Bake at 350 degrees for 15 minutes or until a toothpick inserted in center comes out clean.

   Cool cupcakes completely.

   Mix all icing ingredients together, starting with 2 tablespoons orange juice. If frosting is too thick, add additional orange juice.

   Frost each cupcake.
