QUICK Fudgy Cocoa Cream Cupcakes

   For a triple chocolate treat, chocolate chips and chocolaty cream top off moist fudge cake.



Ingredients

      1  8.25 oz package fudge cake mix
2 1/2  cup Milk
Chocolate chips
     1  cup heavy cream
  1/4  cup unsweetened cocoa powder
     3  T sugar



Directions

   Heat oven to 350 degrees.

   Line 24 muffin pan cups with paper cupcake liners.

   Prepare cake mix according to package directions, stirring in 2 cups milk chocolate chips.  

   Spoon batter into prepared muffin pan cups;  bake 12 to 15 minutes until wooden toothpick inserted in center of cupcake comes out clean.

   Cool in pans on wire racks 10 minutes.

   Remove cupcakes from pans; cool completely on racks.

 

Prepare Frosting:
   While cupcakes cool, in medium-size bowl with electric mixer at high speed, beat cream, cocoa powder and sugar until stiff peaks form.  Swirl cream over cupcakes;  sprinkle with remaining chocolate chips.
