QUICK Cherry-Cheese Cupcakes

   Easy, delicious dessert!



Ingredients

   2  8 oz Packages cream cheese, softened
   2  eggs
3/4  cup Sugar
   1  tsp vanilla
Vanilla wafers
Cherry pie filling (optional)



Directions

   Beat cream cheese until light and fluffy.  Beat in eggs and vanilla.  Gradually beat in sugar, beating until smooth.

   Place muffin cups in muffin pans.  Place vanilla wafer in bottom of each cup.  Spoon in cheese mixture, filling 3/4 cup full.

   Bake at 350 degrees for 15-20 minutes. (They should not brown.)

   Chill and top with pie filling (if desired) to serve.
