QUICK Angel Food Surprise

This is a different party-time dessert. The guests won't know what the surprise is until the cake is cut!
Ingredients
1 10 inch plain angel food cake
1/2 pint whipping cream
1 cup washed, drained berries
1/2 cup sugar
1/2 cup chopped walnuts
1 tsp vanilla extract
1/4 tsp lemon extract
Red food coloring
Icing
2 egg whites
1 1/2 cup sugar
Directions
Place angel food cake bottom side up on plate. With 2 forks carefully cut a 2 inch wide groove around the center of the top of the cake about 2 inches deep, keeping it in one piece. Whip cream: as it thickens add sugar gradually.
Fold in berries, walnuts and flavoring. Fill groove with mixture, trying not to leave any air spaces. Replace top on cake and pushing it on gently to make sure it is level.
Frost entire cake with icing. Stir in 1/4 tsp lemon extract and 6 drops of red food coloring. Place in refrigerator for approximately four hours.
