Blackberry Buttermilk Cake
The blackberries have been big and juicy here in Kentucky this summer, but it has been so hot I haven't picked many! We did get enough for 2 small pies and they were good. This is a soft cake made in a round, springform pan dusted with powdered sugar.
NOTE* Use a 9" or 10" diameter springform pan for baking.
QUICK No Mix Pineapple Cherry Cake-Cobbler
This is an easy no mix cake, that tempts the fussiest eater. The only thing that takes time is the bake time!

Old-Fashioned Stack Cake
I can remember seeing cakes 7 and 8 layers tall! The side were never frosted, most of the time a filling was used instead of icing. An apple filling recipe is given here.

This is a very easy and very good strawberry cake. A real favorite, in the south.
Easy Southern Fruit Cobbler
This recipe is very much like cake with fruit at the bottom. It is really delicious!
Summertime in Kentucky, when the wild blackberries come in, this dish will be on many a supper table, and given to new neighbors or old friends. Friends that are still able, pick the berries and give this cobbler to older folks, unable to still pick berries.
NOTE* Great with ice cream!
Old Fashioned Prune or Plum Cake
This is a lighter version of the old favorite prune cake recipe. Using jars of baby food makes the batter smoother and the cake has a rich taste.
A carmel frosting recipe is included but cream cheese frosting would also go well.

This one is very popular in the south. It's easy, it's moist and you will love it!
Blackberry Bundt Cake
I have picked up many a "chigger" from picking wild blackberries in the woods and fence rows!
Always on the look-out for the occasional snake, walking through the tall grass, the chiggers bury up in your skin along the waistband, or OTHER PLACES, too personal to mention.
(Chiggers are tiny little red insects that eventually die off, after causing much itching discomfort! (Covering them with nail polish makes them die quicker.)
NOTE* This cake would work equally well as a coffee cake for company. Use black walnuts for an even richer cake.
Flour-less, Egg-less, Incredibly Rich Fruitcake
This one is rich, sweet and delicious!
Faye's Kentucky Jam Cake
We all know some one that makes the best food we have ever eaten! The best cakes, pies and casseroles for all the church events. And, for the people that are not able to cook any more.
Faye is that person in Calloway County. Always ready to lend a hand, or a dish to all in need. I am blessed to know her, and call her friend!
NOTE* This is a wonderful, sweet, big, heavy cake. Everyone will love it! It keeps well and freezes well. Cream cheese frosting goes with the flavor of the cake. The cake pictured is iced with cooked carmel icing. It takes longer to cook and prepare. The rcipe is in the icing recipes.
