QUICK Turkey Croquettes

   This recipe is versatile, boasting a lot of flavor in a lean, healthy alternative to other fried foods.      Great as the main course or an appetizer.



Ingredients

      4  cup Diced cooked turkey
   1/2  cup Chopped onions
   1/4  cup Chopped celery
   1/4  cup Minced fresh parsley
      2  Hard cooked egg whites, chopped
      3  T nonfat yogurt
      2  T nonfat mayonnaise
      2  tsp Worcestershire sauce

   1/2  tsp paprika
   1/4  tsp dry mustard
Cracked black pepper
      1  egg white, lightly beaten
1 1/2  cup fresh bread crumbs
      1  tsp Olive oil
1 1/2  cup Nonfat yogurt
      2  T. snipped chives
      1  tsp Lemon juice



Directions

   In a large bowl, combine the turkey, onions, celery, parsley and cooked egg whites.

    In a small bowl, whisk together the 3 tablespoons yogurt, mayonnaise, Worcestershire sauce, paprika, mustard and pepper.  Stir into the turkey mixture and blend well.

   Form into 6 thick patties.  Cover and refrigerate for 1 hour to set mixture.  Place the lightly beaten egg white in a shallow bowl . Place the bread crumbs on a flat dish.  Dip each patty first into the egg white then into the bread crumbs to coat them well.

   In a large no-stick frying pan over medium-high heat, warm the oil.  Add the patties and saute' for 5 minute per side, or until golden.

   In a small bowl, whisk together the 1 1/2 cups yogurt, chives and lemon juice.  Serve as a sauce with patties.
