QUICK Sauteed Chicken Livers

Do not overcook the livers and, you will really enjoy them.
Ingredients
2 lbs very fresh chick livers
Flour
1/2 cup bacon fat
1 onion, chopped
1 cup sliced small mushrooms
Salt and freshly ground black pepper
Directions
Lightly flour chicken livers. Put bacon fat in skillet on high heat. Saute chicken livers with onion and mushrooms until livers are firm, about five minutes.
Stir occasionally so that livers do not burn. Season with salt and pepper. Divide among six appetizer plates and serve immediately.
NOTE: It is important in this recipe to use bacon fat for sauteing chicken livers because it will give the finished dish a good flavor. Be sure not to overcook livers.
